Two Ingredient Pumpkin Cake

Ingredients
Cake
1 Box Cake Mix (you can use carrot, yellow or spice, depending on preference)
15 oz 100% pumpkin- puree not pumpkin pie filling
Chopped Nuts Optional

Apple Cider Glaze
1 C powdered sugar
2 tspn apple cider
1/2 tspn pumpkin pie spice

Instructions
Cake
Preheat oven to 350°.
In a large bowl mix nuts - (if using), cake mix and pumpkin filling using a hand mixer or a stand mixer.
Beat on medium for 2 minutes.
Pour batter into a greased 7 x 11 inch baking dish.
Bake for 28 minutes or until tooth pick comes out clean. Cool completely before frosting with Apple Cider Glaze (below). Serves 8.

Apple Cider Glaze
In a small bowl blend all ingredients until smooth. Pour over Pumpkin Cake letting it drizzle down the sides of the cake. Let set before covering.

Alternative to Pumpkin Cake – Make Muffins instead
Make as cake directions above EXCEPT use a muffin pan with liners and fill liners 1/2 – 2/3 full.  Bake about 20 min (check with toothpick to be sure they are baked thru).  You can top with chopped nuts before baking or dust with confectionary sugar when cool.
