Butter Nut Squash Soup

Ingredients
2 tbsp Olive oil
1 med chopped onion
2 stalks of celery
3 carrots sliced
1 med Butter Nut Squash pealed and cut into pieces
1 qt chicken stock
2 c Water

Instructions
Sautee onions in oil, add celery chopped and carrots add chicken stock and water add salt and pepper to taste
**cook over medium heat until squash is soft.
**Take carrots out and blend in blender and add 1 pint of heavy cream
Enjoy on a cool Autumn evening for supper.
