Quick Lunch Mini-Pizzas

This is a flexible recipe you can make with what's on hand, or pick out specific ingredients that you like.

Ingredients
Sandwich rolls:  Any size or type will do.  My favorites are ciabatta rolls, though kaiser rolls, sandwich rolls, or English muffins will work.  Hamburger buns are OK, but won't have as much flavor.  If rolls are not sliced, sliced as for sandwiches.

Cheese: ideally, mozzarella, but you can cut up or tear up any real cheese you have on hand.  I made these with a mix of swiss, havarti, and asiago.  Estimate the equivalent of two slices per roll.  Avoid processed cheeses (no American cheese, velveta, cheese wiz, etc.).

Sauce: any jarred tomato sauce, or even canned tomatoes that are mostly liquid (crushed, pureed, etc.).  2 tbsp or so per 1/2 roll.

Oregano: 1/2 tsp per roll
Salt and black pepper to taste
Olive oil (optional)

Your favorite pizza toppings (salami, pepperoni, cooked veggies, olives, etc.)

Instructions
Heat up your tomato sauce in a pan on the stove, and add oregano.  Heat on medium heat till the mixture starts to simmer, then reduce heat to continue simmering.  Add salt and pepper if needed.

Put in toaster oven crust-side down.  Toast on a light setting - just enough to make the top a little crisp, but not change the color much.

Shred, tear, or cut the cheese into smallish pieces.

Spoon a couple of tablespoons of sauce onto each half roll.  Spread with the spoon to cover the face of the roll.

Top with enough cheese to more or less cover the sauce. 

Add any additional toppings.

Drizzle with a little olive oil if you like.

Bake in toaster oven at 450 degrees until the cheese (or your topping) starts to turn golden brown - about five minutes, maybe longer depending on the cheese and toppings.

Plate and serve!
